Better late then never

This post is super late because last night my computer decided to crash. Well, it was partly my fault, I accidentally shut it down while it was installing uploads and then when I tried to boot it up again I was faced with this screen:

Umm. Eeek. So I put a shoutout for help on Twitter and Facebook and a few people pointed me to these steps.

Ya, none of them work. So tomorrow I’m going to drop it off at Staples and *pray* they can fix it without losing all of the stuff on my hard drive.

I’m so mad at myself for not backing up my computer. You know what else REALLY sucks, on Monday I formatted my memory card on my Nikon, deleting 800 pictures that I took this summer. The only other place they are? A few are on this blog but all of them are on my laptop. I’m going to be devestated if I lose them.

Onto the post I had planned for today. I’m trying to get back onto a healthy track since the five days I was at home I only worked out twice and did not watch my eating, at all. Well I returned feeling refreshed and rejuventated mentally I felt a big sluggish physically.

So Monday night I stocked my fridge with groceries and last night I decided to make a fall staple, the acorn squash.

After a bit of digging around I found this recipe. Super simple.

Ingredients:

  • 1 Turkey Sausage
  • 1 Fiji Apple
  • 1/2 an Acorn Squash
  • 2 tbsp diced white onion
  • 1/2 tbsp EVOO
  • Salt and Pepper

I started by baking the acorn squash at 400 for about 45 minutes.

While it was baking I sauteed the  sausage and onion in a bit of EVOO and then added the fiji apple for about two minutes.

Pulled the acorn squash out of the oven and piled all the ingredients on, and voila, my dinner.

It was delicious.

Other ways I’m getting back on track after a holiday:

  • Starting right back up with counting my calories on Spark People
  • Hitting the gym, harder then normal. Doubling up workouts. Yesterday is normally a rest day for me, but I did spin instead.
  • Getting back to a regular sleeping schedule. I’m back to getting up at 5:00 am so I’m trying to get to bed by 10:00 at the LATEST.

How do you get on track after a holiday? And I still have half an acorn squash left, what should I make with it?

I enjoyed my stuffed acorn squash yesterday and plan to eat the rest tonight. Your acorn squash meal looks delicious! Way to get back on track!

Awww Amber no way!! That’s terrible that your laptop crashed :( I always put off backing up mine and dyllon’s computer - I guess I really shouldn’t put it off anymore, just in case. I’m sure that your laptop is going to be ok and everything will be on it! :)

Good for you for getting back on track with your eating and working out hard! I am also doing the same. I worked sooo hard at yoga yesterday and concentrated really hard. So hard, in fact, that inbetween my fingers were sweating in my warrior poses ha ha!

I have an amazing recipie I want to share with you too that I just tried - so easy, convienient, and healthy! I’ll email it to you.

Wow! I can’t eat that becuase of my darn allergies but it looks good =) I don’t know anything at all with acorn squash that would be good to make though. I’m clearly not useful today!

Good luck with the gym + getting healthier routine. And remember everyone can fall off their routine on occasion. It’s normal =)

I hope your laptop survives! Mine crashed 2 summers ago.. and I lost all of my pictures and all of my ads I made for classes and writing samples.. ugh! My fault for not backing anything up, but still. I was so upset. That meal looks good! I’ve never had squash. Am I missing out?

Oh boy… I HOPE your computer is ok!!! My laptop died on me right before a huge paper was due and of course nothing was backed up. Thankfully they were able to recover my hard drive before it died for good! You’d think I have learned my lesson but I still don’t back up… maybe this week-end… lol! :)

You know, GOOD JOB for getting back on track. It would be super easy right now to NOT do that because I’m sure you’re busy with school and everything. I’m proud of you!! (ps: I don’t think I could let go of my rest days. They’re what make me look forward to working out the next day!)

I get back on track by making lists of things I need/want to do. It helps me get organized and gives me motivation to get back into the swing of things!

Oh no! Your poor computer! I would be devastated if I lost all of those photos. Dang, I really need to back up my photos/ computer. Must get on that. I hope everything turns out OK with your computer. Fingers crossed!

Your dinner looks delish! I’ve never had acorn squash before. Maybe I could make that recipe with veggie sausage. Hmm.

Oh I forgot about SparkPeople! I was using the service for a few days and got really obsessed! I definitely need to get back to the gym. It’s been forever!

yea no doubt you have to back up regularly. As a computer guy, i have to shout this amongst my friends when they call me to save their stuff when something like that happens. so back up often!

I have a few laptops and a desktop pc (no macs). I use a batch file to copy all of the important stuff from one pc to the next to the next and so on, so that every important file resides on more than one pc. then i also have an external hard drive that i can plug in anywhere and backup files directly to it. Then over the new year’s holiday, I take everything important and burn dvd’s or cd’s for permanent offsite storage. Usually, my parents want a copy of all of the pictures we took during the year, so i just take the discs over to their house for storage. that way even if my house burns down we still don’t lose more than this year’s stuff. Some people will do that every month, i’m too lazy.

Ugh, I know all about computer problems. My last one crashed suddenly in June and I had to wait until August to get a new computer. Not fun! I’m hoping your computer gets fixed soon!

It’s so hard getting back on track after a holiday or vacation! It always takes me a few days to fully get into the swing of things.

So sorry about your computer. That is incredibly frustrating. I am bad about backing up my harddrive. I need to be much more diligent about it. That dinner looks fabulous. Thanks so much for sharing.

Oh geez - that is awful about your computer. Something similar happened to me about 2 years ago. Luckily they were able to get everything off my harddrive… hopefully that is the case for you!!

I get off track sometimes - esp in the summer when i go to the lake on the weekends. I think the important thing is to forgive yourself for it & not be too mad at yourself. And then get right back on track w/ your workouts!!

It was probably good fo ryou to have a little vacation from your scheduole!!

I had to reformat my computer twice this year. You’d think after the first time I would have learned, but still lost some stuff the second time. I do upload all of my photos to flickr, which is good since it you can download the pictures again at their full quality, and otherwise I would have lost a good amount of pictures as well. I hope someone at Staples is able to work some magic on your computer!

I’ve never seen the inside of an acorn squash before!! I’m new to your blog (I found you through my dear friend Kyla) and oh.dear.computer.hell. Recently mine just kind of…stopped; all lights on but nobody home, so I brought it to my IT guy at work - who took it apart and found a BANGLE inside; somehow I’d dropped one in there, it’d got caught and attached to the motherboard and sort of sparked a little… and blew out the CPU. OOPS. I hope yours is fixed soon!!

EEEEEPSSS Sorry about your puter……..first thing you should do after you get it back up and running…..GET RID OF VISTA!!!! LOL seriously its the WORST program!! I’m not a fan of windows to begin with but vista is horrible, nothing but troubles! Steve said if you want to send the pc to him he’d fix it but you probably wanted it back like yesterday lol i can’t live without a computer :)

I LOVE LOVE LOVVVVVVE all squashes!!! (i’m sure that’s not even a word lol)

As for the computer problems….eeek! It stresses me just to see that. Me and technology are not friends at all. Hope it gets fixed ASAP and you don’t lose the photos!

sorry to hear about your computer! mine crashed randomly 2 summers ago and my boyfriend was able to save it but right after that i bought an external hard drive to put all of my pictures on when each season ends. i feel much better about it now! :) good luck- i hope u can fix it!

Awww, sorry about the computer! I hope your files and pictures will be recovered.
As for getting back from the holidays, I find that drinking tons of water makes me feel cleaner and balances indulgent eating. :)
I’ve just caught up reading with your previous entries and I have to say that your hairstyle is gorgeous! I love your self portrait - your happiness shines through.

Nice cooking endeavor!! I’ve never cooked/baked with an acorn squash, this is inspiring because that looks SO good and pretty easy :) Maybe scoop out the second half and roast it with some potatoes and onions? Just a random idea, see above comment (i.e. this veggie is a new one to me, haha)…

I’m impressed with you going to bed at 10 and waking at 5. I go to bed way too late. many times after midnight. no wonder I can’t seem to wake up early! granted, I am not a morning person, but if I went to bed at a reasonable hour, it might be a bit easier to get out of bed :)

so sorry to hear about your computer troubles. that sucks! I hope you don’t lose all your pictures!! I would be devastated if that happened… (I don’t back up either… eek! I need to go knock on wood that nothing bad happens…)
